  • Cut-up chicken: Ask the butcher to divide a whole chicken into eight pieces, or buy a mixed pack near 1.8 kg. Similar-size breast halves are especially important for timing. Keep the skin attached and trim only loose flaps.
  • Butter and oil: Soft butter holds garlic and herbs in place. A little oil keeps the exterior mixture spreadable and encourages an even, thin coating.
  • Fresh herbs: Parsley brings color while thyme handles oven heat well. Chop both finely so no large leaves scorch against the exposed skin.
  • Lemon: Thin rounds perfume the pan without requiring juice on the crisp surface. Save wedges for the table if you prefer a sharper finish.
  • Onion and stock: Thick onion wedges support the pieces and sweeten as they roast. A modest amount of stock prevents drippings from catching without turning the pan into a braise. Pour stock around, never over, the seasoned skin.

How to make Garlic-Herb Oven Baked Chicken

  1. Build the aromatic pan

    Set a rack in the upper-middle oven and heat to 425°F (220°C). Spread onion wedges and lemon rounds across a large metal roasting pan. Pour stock around them. Pat every chicken piece dry. Place thighs, drumsticks, and wings skin-side up over the aromatics, leaving open spaces for the breast pieces that join later.

  2. Apply garlic-herb butter

    Mix softened butter, oil, parsley, thyme, garlic, paprika, salt, and pepper. Loosen the skin over each piece carefully. Rub about one-third of the mixture directly onto the meat and spread the rest in a thin layer over the skin.   3. Stagger the roasting time

    Roast the thighs, drumsticks, and wings for 15 minutes. Add the breast pieces skin-side up to the reserved spaces and spoon a little pan fat over the onions, not the chicken skin. Continue roasting for 25 to 35 minutes. Begin checking each piece at the lower time, transferring it to a clean platter as it reaches its target.

  4. Check each cut and rest

    Remove breast pieces at 165°F (74°C) and dark meat at 175°F (80°C), measuring in the thickest part away from bone. The skin should be deep golden with crisp edges. Rest all pieces uncovered for 10 minutes. Skim excess fat from the pan juices, taste them, and spoon them around the chicken with the roasted onion and lemon.

Tips

  • Leave genuine gaps between pieces. A crowded pan holds moisture around the skin and slows browning along the sides.
